Ingredients Orange, segments Pomegranate Seeds Fennel, diced (Put cold water to crisp up and prevent browning) Mixed Greens Dressing Shallots, minced Orange Juice Pomegranate Tangerine Vinegar (this is just what I had on hand, use what ever you like; rice wine vin and champagne vin would work well here) Dijon Musitard EVOO SnP Reduce orange juice, vinegar with shallots by half,  in a pot or pan over medium heat by half. Let cool, then whisk in dijon and oil; season.

Ingredients Pear, halved, cored, and grilled on both sides, then diced Burrata Prosciutto Spicy Greens, arugula, ridicchio, frisee, escarole, etc Dressing Lemon juice and zest Evoo SnP Balsamic Reduction Heat a grill. Toss halved pear with evoo and salt. Grill on both sides. Remove, slice, and dice. Toss pear with greens and dressing. Plate, with pieces of prosciutto and burrata. Drizzle Balsamic reduction on top.

Ingredients Persimmon Diced Pomegranate Seeds Avocado Diced Guava Diced Cilantro Chopped Mixed Greens Dressing Agave Nectar Guava Lime JnZ Grapeseed Oil? S Dressing Notes: Scoop out the center of the guava where the seeds are. Add to a pot with agave nectar and a little water. Cook over medium heat until guava is soft. Pass guava puree through a mesh strainer into a bowl to remove seeds and extract pulp. Add remaining dressing ingredients and whisk.
