This site is dedicated to the art of creating salads. I, Chef Matt, create a daily salad at work; this site is here to showcase those salads, and inspire you to create your own. My hope, is that by showing you the infinite possibilities of making salads, along with culinary technique, you will expand your imagination and be empowered to create your own signature salads.
Let me explain a bit about the site and why there are no amounts for the ingredients. First of all, I HATE recipes. Whenever I follow a recipe, my food tastes off; therefore, what I am attempting to do with this site, is give you the tools and knowledge so you can use your own judgment on how much of an ingredient to add. Also, my palate is not the same as yours, so who am I to tell you how much of an ingredient to use. You can only discover your palate and the joys of cooking through your own trial and error. Salads are a great way to explore ingredient flavors and combinations. If you love pine nuts then put a bunch of them in your salad; if you have some butternut squash to use up, use it all in your salad; you can even leave the greens out if you don’t like lettuce, but increase the quantity of the other ingredients; or use whatever type of lettuce you want. Don’t depend on a recipe to tell you what to do; listen to your inner chef and let your palate be your guide.
